with 3D printing representing a paradigm shift for confections, los angeles-based architecture team the sugar lab has transformed sugar into three-dimensional, structural medium by utilizing additive technologies. digitally modeled in CAD then printed in real time, the sweet sculptures can be customized for applications such as pastry decoration, or uses in coffee and tea. using a mixture of water and alcohol, the material is applied very precisely in a layer-wise manner, to selectively wet and harden the sugar substrate.
