the spanish chef, martín berasategui has designed a bottle that decants wine sediments and keeps them from rising at the moment of pouring.

the ‘martín berasategui system‘ was conceived by the michelin starred chef to encourage wineries not to have to filter their wines using harsh industrial methods. using his design he claims that the sediments are allowed to filter in a more ‘natural way’.

martín berasategui system benefits 1. you don’t need to filter the wine in the winery. this unnatural process takes away quality and brings down the character of the vineyard. with this new bottle we shall get more natural wines,   with organoleptic tones of the terrain intact: the sediments held at the bottom of the bottle will be the natural witnesses of quality.

the bottle acts without the need of any mechanisms, and the material is the usual and the most appropriate: glass. it decants the sediments and keeps them from rising at the moment of pouring its design and architecture are the elements that make the dregs to stay, by the simple effect of physics, at the bottom of the bottle.

1. dregs dissolved in liquids made from fruits (wines, liquors, juices, oils) penetrate into the bottle during the bottling process.

2 & 3. eventually, the solids dissolved settle at the bottom of the bottle by effect of gravity.

4. at the moment of serving the contents, in a traditional bottle, dregs dissolve again or are swept away into the glass.

5. in a ‘martín berasategui system’ bottle, the vacuum effect will make dregs stay at the bottom.

packaging martín berasategui and his team have also patented a new way of transporting bottles. so far, the cases lay the bottles horizontally or vertically. but why not with the necessary lean that permits the right decanting, as well as being the ideal position of the bottle?

it is undoubtedly another terrific idea that will keep bottles from lying unlabelled in the cellar, allowing, from the moment the wine is bottled, its labelling and lying in the ideal position the case provides. by doing this, we avoid the racking, and subsequent wash of the bottle before being labelled, which is definitely, a costly handling. if the case becomes an excellent wine rack, we are turning the container into a new function (ecological wine rack) instead of an ephemeral product.
