an open fine-dining restaurant in mauritius

 

on the island of mauritius, whitaker studio has designed a sculptural restaurant that opens up like a blossoming flower. the clients are a married couple who, after years of working in the kitchens of paris, wanted to move back to their country and start their own fine-dining business. the main idea for this project was to create an environment where everyone can watch the food being prepared, and enjoy the mesmerizing process.

through conversation with the clients and jeg dudley of london-based engineers AKT, whitaker studio got the idea of forming a triangulated exterior for the structure. the restaurant takes shape as a sculptural shell made of polycarbonate shingles that open and close to facilitate ventilation. the doors are a natural extension of the triangulated form and fold down to create additional seating areas, accommodating from 32 to 40 guests. the project will be completed sometime in 2022, with the help of the engineers at simple works and local architect faiz toorabally.
